Garda Trentino's extra virgin olive oil is the result of a perfect balance between nature, tradition and production know-how. Thisarea, the northernmost of the traditional olive-growing areas, benefits from a unique microclimate that makes it possible to obtain an excellent product, despite the unusual latitude for olive cultivation.
The olive groves, cultivated on sunny terraces between the lake and the mountains, represent an agricultural and cultural heritage handed down over the centuries. The predominant variety is Casaliva, an autochthonous cultivar similar to Frantoio, which gives the oil a refined organoleptic profile. The green colour with golden reflections anticipates a medium fruity aroma, with hints of green almond, artichoke and aromatic herbs. The taste is harmonious, with a balance between bitter and spicy of medium-light intensity, and a pleasant fluidity.
The olive harvest, which takes place mainly by hand between November and January, precedes careful and rigorous processing. Milling, now carried out with modern crushers, takes place at a controlled temperature to preserve all the qualities of the product. The oil is then filtered before bottling, ensuring maximum purity.
Since 1998, Garda Trentino extra virgin olive oil has obtained the Protected Designation of Origin (PDO), a recognition that certifies its authenticity and link with the territory. Production is governed by strict regulations, which ensure respect for tradition and high quality standards. The municipalities of Arco, Riva del Garda, Tenno and Dro are protagonists of this excellence, joining the National Association of Oil Cities.
In addition to its gastronomic value, the oil of Garda Trentino is part of the local culture, as evidenced by the ancient tradition of the "pan de molche", a bread enriched with the residues of the pressing of olives, a symbol of a time when nothing was wasted.
The extra virgin olive oil of Garda Trentino is the result of a unique territory that has 390 hectares cultivated and almost 10,000 olive trees, worked with passion in six local mills.
