The cycle of events "At the table with Trentino cuisine" continues, promoted by the Provincial Wine Shop of Trentino to enhance identity-based agri-food productions and tell the story of Trentino's cultural and productive heritage through the kitchen. In fact, a dinner with guided tasting will be held on Wednesday 18 February 2026 at the Enoteca provinciale del Trentino - Palazzo Roccabruna.
The initiative proposes:
- A guided dinner-tasting that explores grappa as an expression of the territory and as a creative element in contemporary cuisine, not only as an end-of-meal distillate but also as an ingredient and key to gastronomic interpretation. The protagonists of the evening will be the chefs Paolo Dolzan and Barbara Orrù of the Perbacco restaurant in Mezzolombardo, who sign a menu designed to dialogue with the different expressions of the young and aged grappa of Trentino, through a cuisine attentive to the seasonality and quality of the raw materials.
- The dinner will be accompanied by a selection of wines from the territory of the Provincial Wine Shop of Trentino.
- It will end with a guided tasting of three grappas from Trentino, with insights into the sensory and productive characteristics and the differences between young and aged grappas.
The menu:
- Welcome glass of Trentodoc selected by the Provincial Wine Shop of Trentino
- Braised fennel with aged grappa beurre blanc
- Risotto Riserva San Massimo, leek fondue and orange reduction with Riserva grappa
- Frégoloti cake with guided tasting of three Trentino grappas (young grappas and aged grappas)
